I haven’t posted anything here for quite some time now. However, my Instagram account is up to date with, at least, weekly postings – @theglutenfreegourmet – so you can always find the latest food ideas there.

Today I’d like to serve you a wonderful “yoghurt”, believe me, you really want to try this. The Pistachio Yoghurt can be served with many vegetables. If you don’t want to do the aubergines, try with oven roasted carrots instead.

Serves 4 as a starter

“Yoghurt”:
200 ml pistachios, shelled and soaked in water over night
150 ml water
½ tablespoon agave
50 ml apple cider vinegar
1 teaspoon salt (or more)

1. Blend together in a high-speed blender until smooth. Taste and add more salt if needed. Check the texture and add more water if you like.
2. Refrigerate. Should be served cold.

Aubergine:
1 Aubergine, quartered
olive oil
salt
3 tablespoons parsley, chopped
½ lemon, zest
1 tablespoon toasted sesame seeds
½ pomegranate, seeds from
1 teaspoon chili flakes
Pinch of pink Himalaya salt

1. Roast the aubergines quarters (skin side down), drizzled with olive oil and salt, in a 175 C oven for 30-40 minutes
2. Chop the parsley, grate the lemon, toast the sesame seeds (in a dry pan)
3. Squeeze a ripe pomegranate until soft, cut in half and squeeze over a bowl the let the seeds fall out.
4. Serve the aubergine with parsley, lemon zest, sesame seed, pomegranate seeds and Himalaya salt on top plus the “yoghurt” with added chili flakes on the side.

Creamy Aubergine Chickpea Casserole

Sometimes you just need to make something quick (and delicious) with ingredients on hand. The only fresh ingredient (that is necessary in this recipe) is one aubergine (eggplant). The rest is probably already in your cupboard (or can be omitted).

Serves 4

Ingredients:

1 large aubergine/eggplant, medium sized, cut into cubes

Riced cooked potato, Quinoa or Rice

1 large onion, chopped
1 garlic clove, crushed
Olive oil

3 tablespoons tandoori paste
400 g chickpeas, cooked
400 g chopped canned tomatoes

50 ml coconut milk

3 tsp mango chutney

Salt and pepper to taste

Cherry tomatoes (quartered) and parsley

1. Sautee the cubed aubergine in olive oil until browned.
2. Cook the potato and put through a potato ricer or prepare the quinoa or rice.
3. Sautee the onion and garlic until soft (do not brown them). Add the aubergine.
4. Stir in the tandoori paste, chickpeas and canned tomatoes. Let simmer for 15 minutes.
5. Add the coconut milk and heat up to a simmer.
6. Stir in the chutney.
7. Season with the salt and pepper
8. Serve with the potatoe/quiona/rice and tomatoes and parsley on top.

Aubergine Lentil Lasagna

A nice and spicy “lasagna”. Don’t forget to start by soaking the almonds in water at least 8 hours in advance. Then, for a whiter sauce, remove the almond peel, or, like me, let it stay on.

Makes a lasagna 25 cm by 25 cm

150 g green lentils, cooked
1 aubergine/eggplant, thinly sliced (about 3-5 mm slices – use a mandolin)
A bit of olive oil
Salt

Sauce:
½ white onion, chopped
½ small garlic clove, crushed
1 green pepper, chopped
1 zucchini, diced
½ red chili, deseeded and finely chopped
400 g canned chopped tomatoes
Salt and pepper to taste
2 tbsp lime juice.

Almond Cream:
300 ml soaked almonds (should be soaked about 8 hours)
100 ml water
50 ml almond milk (unsweetened)
½ tsp nutritional yeast
2 tsp lemon juice
dash of salt

Parsley, chopped

1. Oven at 200C. Slice the aubergine thinly, spray (coat) with some olive oil and sprinkle some salt on top.
2. Roast the aubergine slices until brown (about 15 minutes)
3. In a pan, boil the lentils in plenty of salted water for about 20 minutes.
4. Sautee the onion and garlic until soft but with no colour
5. Add the green bell pepper and the zucchini – sautee for another few minutes.
6. Add the chopped tomatoes. Simmer a few minutes. Season with salt and pepper.
7. Add the cooked lentils and remove from heat.
8. Stir in the lime juice.
9. Take a few spoonfuls of the sauce and spread on the bottom of an oiled lasagna casserole.
10. Lay a layer of roasted aubergines, then another layer of the sauce, continue the layering and finish by a layer of sauce.
11. Bake in oven 180C for 15 minutes.
12. Make the almond cream by combining all ingredients in a blender and then running until smooth. The cream will not be completely smooth, though, (unless you change the almonds for cashews).
13. When the lasagna is ready, serve with the cream and some parsley on top.

Aubergine Chutney, Coconut Chickpea Hummus with Quinoa

This dish has three main components and makes for a delicious light lunch or a starter. Of course, the chutney and hummus can be used on their own too. The toasted coconut/nuts/seeds in the hummus gives a wonderful crunch to each bite! A must try!!

1.Aubergine Chutney
2 aubergines, finely chopped
1 red onion, finely chopped
2 garlic cloves, crushed
olive oil

½ tsp curry
½ tsp turmeric
2 tbsp white wine vinegar
1 tsp agave syrup
1 tbsp soy sauce

50 ml water
50 ml olive oil
75 ml coconut cream

Shredded basil.

1. Sauté the onion, garlic and aubergine over low heat until soft.
2. Add the spices, vinegar, agave and soy sauce. Stir for a few minutes.
3. Add the liquids and simmer 10-15 minutes.
4. Lastly, stir in the basil.

2.Coconut Chickpea Hummus

100 ml un-peeled almonds, chopped
75 ml shredded coconut
75 ml sunflower seeds
salt and pepper

400 g cooked chickpeas
2 tsp chili flakes
1 tsp smoked paprika
1 lemon, zest and juice

1. Toast the almond, coconut and sunflower seed in a pan. Season. Set aside.
2. Combine the chickpeas, chili, paprika and lemon in a blender and run until well blended. Add some water (or juice from the chickpeas) if it is too thick. It doesn’t have to be smooth.
3. When done, turn off the blender and stir in the toasted mix.

3.Quinoa
200 ml quinoa
500 ml water (or vegetable broth)
salt and pepper
1 bay leaf
1 garlic clove, whole

1. Wash the quinoa and combine all ingredients in a pan
2. Cook the quinoa for 12-15 minutes
3. Discard the bay leaf and garlic

4.Plating.
Rocket salad
Tomato
Olive oil

1. Plate on rocket salad with tomato sliced.
2. Chop some rocket salad and sprinkle on top together with some olive oil.

Aubergine Parmigiana

A good Parmigiana should be made with a great roasted tomato sauce and lots of cheese! This one is a favourite!

Serves 6
3 medium aubergines, sliced lengthwise about 1 cm thick
Olive oil
400 ml tomato sauce
4 eggs
80 g parmesan cheese, grated
200 g mozzarella, thinly sliced
Fresh basil
Salt and pepper
Tomato Sauce:
1 red pepper, cut into pieces
4 (0.5 kilo) large tomatoes, cut into pieces
1 red onion, cut into 6-8 pieces
1 cloves of garlic, crushed
2 tbsp balsamic vinegar
5 basil leaves, shredded
Olive oil
Salt and pepper

Spinach leaves
 

  1. Oven at 200 C
  2. Place all vegetables for the tomato sauce on an oven tray, sprinkle the garlic, vinegar and oil on top. Roast 30 minutes. When done (soft and slightly charred), let cool, place in blender and mix until semi-smooth.
  3. Sauté the aubergine slices in oil over high heat. Place on paper towels to absorb some of the oil.
  4. Cover the bottom of a casserole dish with ½ of the tomatoe sauce
  5. Whisk one egg and pour on top
  6. Place a layer of aubergines and sprinkle some salt on top
  7. Pour remaining sauce on the aubergines
  8. Spread ½ of the parmesan cheese on the sauce and all of the mozzarella
  9. Put some of the basil on the mozzarella
  10. Layer the remaining aubergines on top
  11. Spread the remaining parmesan on the aubergines
  12. Whisk 3 eggs and pour on top
  13. Place some basil leaves on the dish and place in the oven. Bake 20 minutes.
  14. Serve on a bed of spinach leaves, with some ham or with some gluten free bread.

Grilled Aubergine with Crab Appetiser

A festive starter and so easy to make. As well as being guten free it is a dairy free and low fodmap dish.

Makes 5-6

1 Aubergines, sliced lengthwise
Olive oil
Crab – 120 g
2 tbsp chopped dill
3 tbsp mayonnaise
1 tbsp lemon juice
A pinch of cayenne pepper
Salt

  1. Brush the aubergine slices with olive oil and fry until golden brown on both sides.
  2. Combine all remaining ingredients in a bowl.
  3. Place of spoonful of mix on each aubergine slice and fold.

Spicy Aubergine Dip

Spicy and lemony, a great dip that goes with almost anything. I like to serve it with sugar snaps or other cut up raw vegetables.

 

Ingredients

3 medium sized aubergines
2 garlic cloves, crushed
Juice from 1 large lemon (or a bit more)
2 tbsp tahini
2 tbsp olive oil
Salt and pepper
Chilli flakes
1 tbsp olive oil

  1. Oven at 180C
  2. Prick the aubergines with a fork. Bake for about 30 minutes until soft.
  3. Halve the aubergine lengthways and scoop out the flesh into a bowl. Puree with a handheld blender.
  4. Add the lemon juice, tahini, olive oil and salt and pepper. Taste and adjust seasoning if necessary.
  5. Add some chilli flakes, stir and spoon into serving bowl. Sprinkle some extra chilli flakes on top. You may also want to add a few drops of olive oil on top as decoration.

 

Stuffed Aubergine with Roasted Balsamic Red Pepper Sauce

Serves 4
Stuffed aubergine:
3 small aubergines
1 small courgettes (as “skinny” as possible)
5-6 large mushrooms
3 medium size tomatoes
(Concerning the size of the vegetables above, they should fit into the aubergine you’ll be serving in – see photo).
Olive oil
Salt and pepper
Parsley, chopped

Red Pepper Sauce:
2 Red Peppers, in pieces
4 medium size tomatoes, in pieces
1 red onion, in pieces
1 garlic clove, crushed
2-3 tbsp balsamic vinegar
3-5 tbsp olive oil
Salt and pepper

1 cucumber (or an extra aubergine) to serve the sauce in.

Sauce:

  1. Oven at 200C
  2. Place all vegetables in oven proof shallow dish, drizzle with oil and vinegar. Season.
  3. Rost in oven for 45 min, until soft
  4. Let cool slightly, then, using handheld blender, mix in a saucepan
  5. Reheat and serve

Vegetables:

  1. Oven at 150C
  2. Slice the 2 aubergines lengthwise. Cut crisscross in the flesh, drizzle with oil and sprinkle some salt on top. Bake in oven with skin side down for 40 min. Carve the flesh out of the aubergine taking care not to damage the skin.
  3. Chop the carved out flesh and sauté in olive oil. Season with salt and pepper.
  4. Slice the courgettes and mushrooms. Saute in a pan.
  5. Slice the tomatoes.
  6. Assembly the stuffed aubergines by placing some aubergine flesh in the bottom of the empty aubergine skin, then layer the slices of courgette, mushroom and tomato on top. Bake in 150C oven for about 25 minutes.

Assembly on a plate:

  1. Place the stuffed aubergines on a plate, decorate with some chopped parsley.
  2. From a cucumber (or an aubergine), cut thick slices and remove seeds and some of the flesh, leaving a large hollow ring. Place on the plate.
  3. Spoon some of the sauce into the cucumber ring. Pour the remaining sauce into serving saucer.

Aubergine Rolls with Chanterelles and Pine Nuts

These Aubergine Rolls are easy to make and can be filled with many different kinds of stuffing. They may be served hot or cold.

Serves 4

2 aubergines
Olive oil to fry in

Chanterells
Pine nuts, toasted (in oven or in a dry pan) for the stuffing
Pine nuts, toasted, for decorations
Crème Fraiche
Salt and pepper

  1. Slice the aubergines quite thin (5 mm)
  2. Fry in oil until golden brown
  3. To absorb some of the oil, place on paper towels
  4. In a separate pan, fry the chanterelles
  5. Add some crème fraiche and let cook for a 1-2 minutes.
  6. Season
  7. Add the pine nuts to the chanterelle mix.
  8. At one end of an aubergine slice, place a small spoonful of chanterelle mix, then roll it up. Do the same for all the slices.
  9. Serve on plates and decorate with pine nuts.
